FLOURLESS BANANA BROWNIES
Flourless with rich cocoa, bananas and macadamias make these a fun, tropical treat.
Once in a while, a sweet treat just feels like it might be worth it. And since I am endlessly trying to find some way to use up overripe bananas, brownies seemed like a good option. I was rememberingmy paleo banana pancakes recipe, and how the egg, almomd butter and banana combination didn’t need flour to yield a yummy, fluffy result. Almond butter gives the batter a healthy fat. Cocoa powder adds richness and macadamia nuts just seemed tropically apropos with bananas! The overripe bananas give it just enough sweetness, so there’s no added sugar.
It’s really important to mash the bananas to an almost puréed consistency, in order to blend with the ingredients without banana chunks. The more overripe and slimy, the better!
